    Bacon Fried Rice

    Since this struck me like a thunderbolt this morning, I figured I’d share: a simple recipe to warm the heart and get the day moving. As improvisations go, I thought it was particularly inspired, if not the most cholesterol-friendly bit of sunshine.

    For this you’ll need:

    2-3 strips of bacon

    1-3 eggs

    serving or two of cooked rice (Trader Joe’s microwaveable stuff is fast and easy)

    frozen veg, 1/2-1 cup depending on your druthers

    soy sauce to taste

    Put bacon in skillet and cook until fat is rendered and bacon is crispy. Frankly, all recipes should begin this way. Remove bacon and set aside. Whisk eggs and pour into skillet, folding and slicing with a spatula until you’ve got lots of eggy morsels. Add cooked rice and frozen veg to pan, tossing to coat with bacon fat; cook until some of the rice is a bit crispy and veg is warmed through. Season with a splash of soy sauce; cut bacon into strips and return to pan; toss and serve.

    Total time from cold pan to hot plate is 10-12 minutes. It’s not as greasy as you’d expect and therefore I am declaring it a big ol’ breakfast win.

    What I like about this is that it requires no extra oils (bacon fat FTW), only a little bit of soy for seasoning, uses no specialized ingredients, and can probably be assembled in the grip of a wicked hangover. I required only a tiny bit of coffee to steel myself for the process.

      I’m disturbed. But I’d probably like it if it had just enough vegetables to offset the greasiness.

      Wait until your child needs solid food and you’ve only got ten to twelve minutes to make something hearty, and only one pan to do it in. You’ll get there.
